Smoked lamb shoulder from @lumina.farms was paired with a garlic aioli, crispy cucumbers, spicy pickled red onions, and many fresh herbs. The lamb jus is served on the side, made from the drippings and fortified with soy and spices.

Very impressed with the quality of this lamb, it’s my first Oyster Shoulder that I’ve worked with and I can’t wait to cook another. So much natural flavor. It was fun to experiment with new flavors.

Let’s spice up a classic Chicken Cordon Bleu wit Let’s spice up a classic Chicken Cordon Bleu with roasted poblanos, Honey Ham, and bold Pepper Jack Cheese from @kretschmardeli. We always have some on hand, and stuffed, cheesy chicken is so much more exciting than your average sandwich. Granted, I would never turn down a ham and cheese sandwich.
Flattened out and stuffed with the goods, the chicken is rolled up and chilled for an hour before being lightly dredged in flour, egg wash, and seasoned panko. Roast these in your smoker or oven at 325°F or until the chicken is fully cooked at 165°F. Rest for a few minutes before slicing into that amazing combo of meat, cheese, and chiles. Did I mention that melty cheese?

These Smoked Rocky Road Brownies are crazy rich, s These Smoked Rocky Road Brownies are crazy rich, sinful, and I have no regrets. Filled with smoked peanuts and chopped @stuffedpuffs these were smoked at 350F until almost baked. Topped with additional @stuffedpuffs (why not, I’m already eating dessert) they were finished off to melt before being topped with more smoked peanuts and a homemade chocolate espresso sauce.

Grilled yellowtail fish and chips? Oh absolutely y Grilled yellowtail fish and chips? Oh absolutely yes.

The tasty plate features flavorful fish from @dutchyellowtail alongside crispy potatoes and sriracha mayo. This was my first time tasting their yellowtail, which I picked up at @wholefoods. Their fish is certified and approved as sustainable and environmentally friendly by the Aquaculture Stewardship Council (ASC), important to our family as we make choices to feed ourselves and the kids. These 🐟 are raised on-land using 100% renewable energy with no hormones and no antibiotics. I'll share the quick recipe soon, so stay tuned.
