Hatch Chile Chimichurri Sauce

  • Triple-Seared Steak is definitely a fun one. Grab some whiskey or bourbon and give this a try:

🔥 FIRST SEAR. Heavily salt the steak using coarse salt. Don’t worry, most of it will get washed off in the next step. This helps build flavor and the initial crust. Sear both sides, flipping occasionally. Pull the steak off when it’s about 90°F internal temperature.
🔥 SECOND SEAR. Dip the steak immediately into the whisky, washing off the salt. You only need to dip it in here gently for a minute or so before the next sear. Sear both sides, flipping as needed. Pull the steak off when it’s about 115°F internal temperature.
🔥 THIRD SEAR. Dip the steak into soy sauce on both sides and let it sit for 1-2 minutes, soaking up the soy sauce. This is the final layer of flavor. Sear both sides as needed to build the final crust. Medium-rare is my preference, so I pull the steak off around 130°F before resting for a few minutes.

Hot Tips:
▪️Use a medium-heat on the grill, not high heat. You don’t want to burn the sausage and the bread before the inside is cooked.
▪️Use a grill with 2-zone cooking, so you can offset the bread. The @pkgrills is perfect for this!
▪️I typically will wrap them stacked in foil to melt the cheese and soften the bread. This also keeps them warm for serving.
▪️Don’t forget chimichurri! The one from @alfrugoni is clutch.

  • ✅ Save: Loaded Baked Potato Jalapeno Poppers

Who knew mashed potatoes would taste so good in jalapenos? These are absolutely addicting, and a perfect solution for all of that scooped-out potato when you’re making Smoked Potato Skins.

The filling can be prepared up to 3 days in advance. Keep the filling sealed in a container in the fridge, separate from the jalapenos.

Recipe below:
4–5 medium russet potatoes
8 large jalapenos
8 ounces of cream cheese, room temp
1/2 cup cheddar cheese
2 teaspoons Signature Sweet & Smoky Rub (on blog @chilesandsmoke )
3 scallions, sliced thin
Fresh ground black pepper to taste
1/2 cup bacon crumbles

Preheat your smoker or oven to 325°F. Cook the poppers on a wire rack with a baking sheet, which prevents them from wobbling around the grill grates and saves time with transferring. Cook for about 25-30 minutes, until the jalapenos have started to darken and the cheesy potato filling is melty.

  • Are these burnt ends? Well, they are burnt, caramelized, and delicious.

It’s a stretch to call them burnt ends but it does speak to the process. Live fire burns the outside of the pineapple, steaming the inside to perfection. The pores allow the wood-fired flavor to penetrate into the pineapple, giving the fruit a wonderful flavor.

Temperature matters with this recipe, otherwise you can overcook the pineapple and have mush. I use my @thermoworks Thermapen to hit the perfect 140°F for this cook.
