Pumpkin Spice Chile Wings

The pumpkin spice game is real.

These pumpkin spice chile wings came out of nowhere. Here I am watching people buy pumpkin spice cookies, pumpkin spice lattes & pumpkin spice soap. Obviously I’m not going to give in to the trend that we all dread but secretly love. So I go out and buy a jar of pumpkin spice.

Chicken wings are my favorite blank palette for experimenting with new combinations (See my Pollo Asado Rojo Wings for another unique recipe). Not only can you use any spices but you can easily add second (or third) layers of flavor with sauces to really maximize each bite. The ingredients in pumpkin spice aren’t that foreign: cinnamon, ginger, nutmeg and allspice. I keep it simple and use McCormick Pumpkin Pie Spice. These are great spices for a wide variety of dishes.

The sauce on these are so simple: butter, brown sugar, pumpkin pie spice, and Frank’s Red Hot. Sure, I could have made my own hot sauce but sometimes you just gotta go with what’s available and tastes good. I’m a sucker for Frank’s and it really works with these spices.

What are those tiny yellow balls on the wings? Great question! They are yellow mustard seeds. The flavor works well with the spices and adds some texture, which I absolutely love on wings. The dark color of the un-sauced wings (see below again) is from a combo of chipotle chile powder and smoke from the grill.

This is where I could spend more time talking about wings. Or pumpkin spice. Or sauce. I feel like I covered everything and you’re probably just read to cook at this point. Pumpkin Spice Chile Wings

These Pumpkin Spice Chile Wings give you the fix you're looking for in Fall with sweet & heat on top of it.

 2 lbs chicken wings
Rub
 2 tbsp paprika
 1 tbsp yellow mustard seeds
 1 tbsp pumpkin pie spice
 2 tsp kosher salt
 1 tsp onion powder
 1 tsp garlic powder
 1 tsp cumin
Sauce
 ¼ cup melted butter
 ¼ cup Frank's RedHot Original Sauce
 2 tbsp pumpkin pie spice
 2 tbsp brown sugar

Separate the wings and pat them dry. This will ensure that they are super crispy.

Preheat your smoker to 250°F.

Combine the spices for the rub, then apply to the wings. Place the wings on the grill and smoke them for 45 minutes undisturbed.

Mix the ingredients together for the sauce, taste, and adjust as necessary. Add butter if it's too spicy, more sugar if you want it sweeter, etc.

Remove the wings from the grill and let them rest. Crank up the grill to 400°F. Let the wings grill at the high heat for about 6-8 minutes on each side. They will need to read at least 165°F with an instant-read thermometer when inserted into the thickest portion of each piece.

Remove the cooked wings from the grill and toss in a bowl with the sauce, or brush the sauce on as they are resting. Consume right away!
