- 10 corn tortillas
- 2 tbsp cooking oil (avocado or vegetable)
- 1 jalapeño, diced
- 1/2 sweet onion, diced
- 1 lb ground beef (80/20)
- 1/4 cup tomato sauce
- 2 tablespoons Sedona Sand Fiesta Seasoning
- 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- 2 cups shredded green cabbage or iceberg lettuce
- 1/2 cup fresh salsa or Chipotle Salsa
- 1/2 cup sour cream or Mexican crema
- 1/4 cup fresh cilantro leaves
- 2 limes, cut into wedges
Instructions
- Preheat a griddle over medium-high heat, or a large cast iron skillet over medium heat. Toast corn tortillas 20 to 30 seconds per side to make them pliable. Move to a plate and cover with a clean towel.
- Add 1 tbsp oil to the cooking surface. Cook the onion and jalapeño for 2 to 3 minutes until softened.
- Add the ground beef, press into an even layer, and let it sear undisturbed for 2 minutes. Break it apart and continue cooking until fully browned, about 6 to 8 minutes total.
- Reduce heat to medium. Stir in the tomato sauce and Sedona Sand until glossy. On a griddle, push to one side. In a skillet, transfer to a bowl and wipe the pan.
- Add a light layer of oil to the surface. Place tortillas flat, as many as will fit. Sprinkle cheese across the middle of each, add a heaping tablespoon of beef on one half, then more cheese on top. In a skillet, work in batches of 2 to 3.
- Fold each tortilla in half and press gently with a spatula. Fry 90 seconds to 2 minutes per side until deep golden and the cheese has sealed the shell shut.
- Move to a paper towel-lined plate. Open slightly and add cabbage or lettuce, salsa, sour cream, and cilantro. Serve immediately with lime wedges.
Notes
- The cheese underneath the beef is what seals the taco shut as it fries. Do not skip it.
- Warm your tortillas on the griddle before folding. Cold tortillas crack.
- Do not microwave leftover fried tacos. Reheat in a hot oven or air fryer to bring back the crunch.
