Spicy Glaze Recipe
• 2 tbsp Sriracha, or other thick hot sauce
• 1 tbsp Dijon mustard
• 1/4 cup brown sugar

Glaze both sides of the bacon and place in your smoker at 200 °F. Make sure they do not overlap or touch. They will stay here for almost 4 hours.

Blot the bacon with a paper towel every so often if you see any grease forming on the top. This will ensure they stay super crispy.

Make sure it’s cooked to your preference. The bacon is firm, yet fairly pliable. It stands up on its own with a slight bend before it snaps. Take a bite and test it out.
