These are so simple to make with generous portions of juicy steak and flavor bursts. Chipotle skirt steak fajitas are quite spicy but balanced out with sweet peppers, cilantro, and sour cream.

The marinade includes chopped chipotle chiles in adobo, coffee, minced garlic, and a few other components. Marinate your skirts steaks for a minimum of one hour in the fridge

Skirt steak only takes a few minutes to sear over high heat. Cook for 2 minutes per side, and continue to flip until it's cooked through.

Skirt steak cooks very fast, so be careful. For a medium-rare steak you should take it off when it reads 130F internal temperature.

While the steak is resting, sautee your veggies. I like to use sweet peppers and onions to counter the spicy, smoky flavors of the steak.
