  • It’s hard to beat smoked chicken thighs. I do love wings, and pulled chicken sandwiches, but those thicc thighs just hit different. Smoking them over charcoal allows you to get a nice sear at the end too, giving that slightly charred chicken skin which reminds me of childhood.   • Smashburger Tacos are hitting the streets. Grab some tortillas and let’s GO! I’ve been working on this process for a bit and realized that smashing the meat with the flour tortilla directly on the griddle is very effective, and saves a few steps of preparation.
