This mac and cheese recipe was supposed to go in the cookbook, but it just wasn't ready. I set a bar for myself to make a creamy version without using Velveeta or American, but allowing it to smoke. It's a challenge, as usually the cheese sauce can split, get greasy, or clumpy. Hopefully you enjoy this as much as our family and friends have!   • 🍗 Grill up some wings this weekend! It’s hard to beat grilled chicken wings right over the fire. I really feel most people over-complicate these, adding extra ingredients and steps. Focus on the heat and flavors. Chicken wings are more forgiving than the rest of the chicken. They actually taste better overcooked, up to about 185 or 190°F because the meat and fats crisp up more and tear off the bone much easier. If you’re not going to use a BBQ sauce for your wings, I highly recommend hitting them with lime or lemon juice right at the end to give them that little bit of brightness and moisture.
