This journey has been intense and exciting. One of my "pinch me" moments was getting back the reviews after sending the cookbook out to some of my culinary heroes, such as @stevenraichlen. He's a massive inspiration to my work, and I can't believe he read through my book.

—RECIPE—
3 lbs red-skinned potatoes
1 cup small dill pickles, diced or chopped
1 ½ cups diced celery
4 hard-boiled eggs, cooled and chopped
1 ¼ cup mayonnaise
¼ cup pickle juice
1 tablespoon white vinegar
1 tablespoon Dijon mustard
2 tablespoons Nashville Hot Seasoning, recipe at @chilesandsmoke link
1 minced shallot, about ¼ cup
4 tablespoons fresh dill, chopped

Inspired by the real deal, I came home and have been working on my own version of this addicting spice mix. I’ve added 2 specific ingredients which complement the heat and elevates the depth of flavors. Give it a try and let me know what you think!

—RECIPE—
4–8 tablespoons cayenne pepper powder, depending on heat preference
1/2 cup brown sugar
2 tablespoons paprika
1 tablespoon kosher salt
1 tablespoon celery salt
1 1/2 tablespoons chipotle powder
2 teaspoons granulated garlic
2 teaspoons black pepper

  • One of the best bites I’ve ever smoked. Vindaloo beef short ribs are just incredible.

The authentic dish is a very aromatic and spicy dish from Goa. There’s an English version too, but it’s spicier and less tangy from the vinegar flavors. I used the Goan influence to build the tangy mop sauce and seasoning blend, pairing the beef short ribs with creamy raita. We served this over rice and herbs.

-Vindaloo seasoning blend-
Toast the first 5, grind, and mix with the rest.
2 tablespoons black peppercorns
1 tablespoon cumin seeds
1 tablespoon coriander seeds
4 cloves
8 dried chile de árbol peppers
2 teaspoons kosher salt
1 tablespoon paprika
1 tablespoon brown sugar
1 teaspoon ground turmeric
1 teaspoon ground cinnamon

-Vindaloo mop sauce-
Boil the shallots, garlic, and ginger. Turn off heat and add the rest.
4 cups water
1 cup chopped shallots, about 2 shallots
8 garlic cloves
2 tablespoons fresh ginger, sliced
2 tablespoons unsalted butter
1/2 cup white vinegar
2 tablespoons Worcestershire sauce
