Nashville Hot Pickle Potato Salad

  • It’s hard to beat smoked chicken thighs.

I do love wings, and pulled chicken sandwiches, but those thicc thighs just hit different. Smoking them over charcoal allows you to get a nice sear at the end too, giving that slightly charred chicken skin which reminds me of childhood.

  • Smashburger Tacos are hitting the streets. Grab some tortillas and let’s GO!

I’ve been working on this process for a bit and realized that smashing the meat with the flour tortilla directly on the griddle is very effective, and saves a few steps of preparation. The full walkthrough is in my bio @chilesandsmoke.

These cook quickly, and with a tortilla instead of the buns you can crush more meat + toppings.

  • Guajillo Ketchup, a recipe I’ve been holding onto for 10 years. I’m excited to share this one in the cookbook 📕 

No wasted sauce will sit in your fridge. One of my goals with the cookbook is to make sure that if a reader spends time making one of the complex sauces, there are a few recipes that use the sauce in different ways. The worst feeling is spending a lot of time making something and only having 1 recipe to use it with.

  • Nashville Hot Bacon-Wrapped Pickles with delicious @smithfieldbrand bacon. Stop and make these!

Crispy smoked bacon wrapped around pickles is simple and extremely delicious, but when you dust the outside with my Nashville hot seasoning… things get kicked up. This spice mix is fiery and matched with the savory bacon and juicy pickles it becomes the ultimate appetizer.

Simply pick up some hometown original bacon from Smithfield and wrap high-quality pickles. Don’t use the glowing neon green ones, get some crisp ones. Cook at 300°F for about an hour, or until the bacon is crispy. Yes, you can use your air fryer or oven. Nashville Hot Seasoning recipe below:

4–8 tablespoons cayenne pepper powder, depending on heat
1/2 cup brown sugar
2 tablespoons paprika
1 tablespoon kosher salt
1 tablespoon celery salt
1 1/2 tablespoons chipotle powder
2 teaspoons granulated garlic
2 teaspoons black pepper

  • Crispy Skillet Potatoes with Mojo Rojo & Verde, pg 167.

This was one of my first recipes in the cookbook that was shot 📸. I wasn't mad when my editor asked me for additional photos and I had to make it again. The sauces are incredible and super simple to prepare. Potatoes are a great way to enjoy them, but really any roasted vegetables, chicken, fish, or even seafood pairs well too.

Part of my personal challenge for this book was to share recipes that used different types of sweet and bell peppers. No, there are not stuffed bell peppers in the cookbook. Tasty, but predictable.
