Smoked Carne Seca: Mexican Jerky. Snack Away!

  • CREAMY Smoked Mac and Cheese

Tuck into pure comfort with a creamy blend of three types of cheeses and crispy bacon, all infused with a rich, smoky flavor.

This mac and cheese recipe was supposed to go in the cookbook, but it just wasn't ready. I set a bar for myself to make a creamy version without using Velveeta or American, but allowing it to smoke. It's a challenge, as usually the cheese sauce can split, get greasy, or clumpy. Hopefully you enjoy this as much as our family and friends have!

Smoked Mac and Cheese

1 pound macaroni pasta
2 cups whole milk
2 cups heavy cream
1 stick unsalted butter (1/2 cup)
½ cup all-purpose flour
1 tablespoon mustard powder
1 tablespoon Signature Sweet & Smoky Rub
2 cups shredded sharp cheddar
2 cups shredded Gouda
2 cups shredded Monterey Jack
1/2 pound thick-cut bacon (optional)

  • 🍗 Grill up some wings this weekend!

It’s hard to beat grilled chicken wings right over the fire. I really feel most people over-complicate these, adding extra ingredients and steps. Focus on the heat and flavors.

Chicken wings are more forgiving than the rest of the chicken. They actually taste better overcooked, up to about 185 or 190°F because the meat and fats crisp up more and tear off the bone much easier.

If you’re not going to use a BBQ sauce for your wings, I highly recommend hitting them with lime or lemon juice right at the end to give them that little bit of brightness and moisture.

Everyone’s making chicken bacon ranch sandwiches, but I like everything spicy. This peppery, smoky sauce from @hidden.valley really adds a nice creamy kick of flavor.

  • 🌶️ Hot honey wings + corn ribs = your weekend menu

Seriously, you’ve got to try this combo. The Original BBQ rub and Hot Honey BBQ sauce from @ribrackbbqsauce made this recipe extremely flavorful without the effort. Grill wings, grill corn, and you’re done.

I first discovered the Rib Rack sauce last year. As you know I love to make my own recipes for BBQ sauces, but I always have jars in the fridge too. Their recipes are extremely clean, with no junk and it’s all big bold flavors. My boys love it too, so it’s a must to keep on hand.

*BE CAREFUL* when slicing the corn cobs. I recommend keeping your hands on the back of the blade. It is way easier if you slice a flat side on the end of the cob and stand it straight up, but you need to move slowly.

Trust me when I tell you that bitters belong in a Margarita - they are a foolproof way to elevate your at-home cocktails as it amplifies flavor and balance notes. The dashes of ANGOSTURA® orange bitters balances out the sweet and spicy guajillo simple syrup, the tangy lime juice, and the smoky aged tequila. This is meant to be shaken, not blended, and served over ice.

Don’t forget to use some smoked salt and chipotle powder for the rim of the glass to take it over the edge.

1 1/2 ounces resposada or anejo tequila
1 1/2 ounces fresh lime juice
1-ounce Guajillo simple syrup (or 1-ounce Agave)
4 dashes ANGOSTURA® orange bitters
Smoked salt and chipotle powder for the rim
Rub the rim of an old-fashioned glass with an edge of a lime slice.  Swirl the rim through a small pile of smoked salt and chipotle powder. Add large ice cubes to the glass. Combine tequila, lime juice, Guajillo simple syrup, and ANGOSTURA® orange bitters in an ice-filled shaker. Shake vigorously for 15 seconds, then strain into the prepared glass. Serve with a slice of lime and guajillo chile.

Substitute the Guajillo simple syrup with Agave if you’re looking for a sweeter drink with less heat. Agave has a mild flavor that tastes like caramel and honey.

Guajillo Chile Simple Syrup
1 cup white sugar
1 cup water
2 large dried guajillo chiles, deseeded and chopped
Combine simple syrup ingredients in a small cooking pot on medium heat. Stir for a few minutes until the sugar dissolves. Remove from the heat, strain, and allow it to cool.
