  • Salmon Al Pastor tacos cooked over the open fire were crazy delicious.

🌮 Not shown: The tortillas were warmed up. Don’t worry, no cold tortillas were used.

Live fire is tricky, which is why it’s so fun. This was one of the first times I’d ever cooked a whole side of salmon in the cage, and it was a learning experience. There are things I’ll do differently next time, but the flavors were spot on. Thankfully so, because that’s my game.

Al Pastor Marinade:
4 whole arbol chiles
5 whole guajillo chilies
1/2 cup orange juice
Juice of 1 lime
⅓ cup white vinegar
1 teaspoon dried Mexican oregano
1 tablespoon achiote paste
1/4 cup distilled white vinegar
3 whole cloves garlic
1 tsp white sugar
2 tsp kosher salt

This recipe was cut from the cookbook. I got to a point where I just didn't want the recipes to lean too heavily into Korean flavors. It's easy because the flavors are so frickin tasty! Also, I had some other stories I really wanted to tell that just had a priority.

I’ve got a few coffee-based rubs, and this one is a simple one to put together.

-Espresso Steak Rub-
2 tablespoons espresso coffee grounds
3 tablespoons ancho chile powder
1 tablespoon kosher salt
½ tablespoon black pepper
1 teaspoon dried Mexican oregano
1 teaspoon dark brown sugar
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon

  • Korean BBQ Drumsticks, you need to make these. Chiles and strawberries come together for this sweet, savory Korean BBQ Sauce. Baste this on chicken, pork, seafood, or anything that needs a big kick of sweet heat.

This was a recipe CUT from the cookbook! I’ve decided to drop it before the book release anyway because it’s a freaking delicious one.

Korean BBQ Seasoning
1 tablespoon black peppercorns 
1 tablespoon yellow mustard seeds 
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon fennel seeds 
1/3 cup kosher salt
1/4 cup paprika
1/4 cup brown sugar
1/4 cup white sugar
3 tablespoons gochugaru
1 teaspoon chipotle powder
2 teaspoons granulated garlic

Korean BBQ Sauce
1 cloves grated garlic
1 tablespoon grated ginger
1 tablespoons honey
2 tablespoons ketchup
2 tablespoons soy sauce
1/3 cup Strawberry jam
1/2 cup Gochujang
1/4 cup brown sugar
3 tablespoons Rice wine vinegar
1/4 cup Water
  • Grilled Kung Pao Wings are probably one of the best recipes for wings that I have. Loaded with ginger, chiles, peppers, peanuts, and Szechuan peppercorns... every bite is an explosion of fiery flavor 🔥 🌶️ 

It’s a complicated recipe, given that there’s a lot to prep for before you start. Cooking the wings is the easy part. Once the skillet is hot, everything else happens really fast with specific timing and order to make sure nothing burns, and everything is glazed properly.
