  • Grilled Kung Pao Wings are probably one of the best recipes for wings that I have. Loaded with ginger, chiles, peppers, peanuts, and Szechuan peppercorns... every bite is an explosion of fiery flavor 🔥 🌶️ It’s a complicated recipe, given that there’s a lot to prep for before you start. Cooking the wings is the easy part. Once the skillet is hot, everything else happens really fast with specific timing and order to make sure nothing burns, and everything is glazed properly. 🔥 The @webergrills MasterTouch is perfect for this.   • Smoked Pork Belly Carnitas make the best tacos. I have yet to build a sandwich with it, which really needs to happen. Are they traditional? Absolutely NOT. Let’s get that out of the way right now. I’m calling them carnitas for their flavor, fat content, and contrast of crispy textures. One bite of these and you’ll understand. They taste and feel just like carnitas, but with the wood-fired smoke flavor. ▪️@thermoworks Thermapen for the probe test is a must. ▪️Dry brined on @nordicwareusa wire rack for 24 hours. -Pork Belly Carnitas Seasoning- 1 tablespoon black pepper 1 tablespoon kosher salt 1 1/2 teaspoons granulated garlic 1 teaspoon onion powder 1 teaspoon ground Mexican oregano 1/2 teaspoon ground cumin 1/2 teaspoon ground coriander 1/4 teaspoon cinnamon
  • Jalapeno Berry Sauce is definitely one of my favorite recipes in the cookbook. Pick up the cookbook at the link in my bio (@chilesandsmoke) which releases on March 21st! This sauce is not only great with pork belly. Anything chicken, shrimp, fish, and even as a glaze for beef. It’s sweet but has savory notes from the ginger and soy as well. I’ve yet to try it mixed in to make compound butter, but I definitely will. I wrap with @reynoldsbrands for the braise, helps to tenderize to perfection.
